Not My Grandma's Salsa
Growing up in a pretty large family Salsa was a “go-to” for almost all gatherings. I remember visiting my grandparents in Houston every year when I was younger. It was always so special when my grandmother would teach us to cook some amazing things that I plan on passing on to my children. One of the easiest things I remember her showing my sisters and me how to make was salsa and it was delicioso! I wish I had all of her recipes memorized but let’s be real, I’m not that cool. I recently made this recipe for the first time in over 10 years for my mother-in-law’s Bday dinner. It happened to be a huge hit! I wanted to share it with you here. From my table to yours. Here is a twist on the salsa we use to make and I hope you love sharing it with your loved ones as much as I do.
INGREDIENTS
2 cans of organic (peeled) whole tomatoes. (I like the brand Muir Glen. It can be found at Sprouts Market and Target).
2 or 3 bell peppers (green, yellow, or orange. I don’t do red because of all the tomatoes it does nothing for the color that you want the salsa to have).
2 fresh jalapeño’s. (Please use kitchen gloves! haha You don’t want to get this juice on your hands and then touch ANY part of your body…)
1 clove of garlic.
1 cup of organic cilantro.
1 1/2 of a medium-sized purple onion. (The purple onion gives it a beautiful color and a sweeter taste).
1 1/2 fresh squeezed lime.
1 fresh squeezed lemon.
(I used 2 drops of lemon and lime essential oil in place of the juice and it was amazing)!
salt and pepper to taste. (I say to taste because I know some people like theirs a little saltier and that’s perfectly fine).
Trader Joe’s Everything But the Bagel Seasoning to taste. (Because I put this on everything…)
INSTRUCTIONS
1. Chop the stem off the bell peppers. Now chop them into haves.
2. Chop the stem off the jalapeño’s and carefully slices in half (from top to bottom). Now take a spoon and deseed.
90% of the heat is in the seeds… so leave just a little if you like the extra spice.
3. Chop half of your onion into little chunks.
4. Make sure to wash your cilantro.
5. Squeeze your lemon and lime (if you don’t have essential oils).
6. In a large bowl, add all of your ingredients.
7. With a hand blender, blend all ingredients together until fully mixed.
If you don’t have a hand blender, a regular blender will do the job.
8. Put into a pretty dish and garnish with cilantro.
