Cozy Banana Bread

This weather is magical! Cold, crisp, and full of possibilities. This time of year is my favorite. God’s glory is in every little thing and it makes me feel so much. We went to Birmingham after Christmas for the first time in three years and it was so life giving. My little family getting to spend time with my parents and siblings in my hometown. Something about being back home with family playing games, laughing, singing and baking things with the kids brings so much joy to my soul. this Banana bread specifically is special to me because when Jase and I first got married he had told me how much he loved it during the holidays. Well, it sent me on a mission to find the perfect recipe and Lord knows I didn’t find anything special so I decided to take what I knew and make my own and this is it! After 2020, it is now a staple in our home. We make this at least twice a week now and with no guilt because its low sugar and GF! I hope you love it as much as we do.

DRY INGREDIENTS

2 cups of all purpose GF flour. (I use Bob’s Redmill)

1/2 cup of coconut sugar

1/2 cup of milled flax seed

1 tsp of baking soda

2 tsp of baking powder

1 tsp of salt

1/2 tsp cinnamon

1 cup of dark chocolate chips ( I use lily’s from sprouts )

WET INGREDIENTS

4 ripe bananas

2 eggs

1/2 tsp pure vanilla extract

1/2 cup butter at room temp

20-25 drops of stevia

INSTRUCTIONS

1. set out your butter

2.   preheat oven to 350F

3.   in one bowl, mix together all dry ingredients

4.   smash up your 4 bananas

5.   now, in another bowl, mix together all wet ingredients

6.   using a hand mixer, combine all ingredients together

7.   line your bread pan with parchment paper  (for easy removal)

8.   bake for 40- 50 minutes

MUFFINS

If you are making muffins, I suggest adding 2 tbsp of oat milk

Bake for 25-30 minutes.
